Five Things I Learned at Work this Week Vol. 4
One little thing I learned each day: week of May 5th through 9th.

Monday, May 5th: I’d take a busy night over a slow night in the kitchen any day. It’s peaceful, but it goes by slowly and the quiet makes your eyes sting and there’s way too much time to think about your life.
Tuesday, May 6th: Umm brief intermission because I forgot to write down something I learned… I’m sure I learned something though. It’s impossible not to, like you’d have to really try not to, or just really not care at all.
Wednesday, May 7th: There’s 3 kinds of washes in bread: egg, water, and dairy (milk or cream). Egg is primarily used for color, water for crunch, and dairy for softness.
Thursday, May 8th: There are two variations of rhubarb: green and red. I only knew of red before I brought a quart of poached rhubarb to chef and asked why it looked so different from the last. Oh! Also, my dad's best friend from college and his son came in tonight. There's nothing like knowing some of your favorite people are in the dining room. Nothing like walking them a plate you're proud of. I sent them an Olive Oil Cake, with lemon chantilly, macerated strawberries, candied olives, orange oil and fennel pollen. That's why the photo's featured :)
Friday, May 9th: When you’re training someone at your station, it’s your job to make sure the right plates go out. Unfortunately even if it’s their 6th shift. I didn’t do a very good job of that tonight.
