Monday, April 28th: Don’t scoop the ice cream for a BEO until all the tables are cleared and they’re ready for it.

Tuesday, April 29th: Baking soda + cream of tartar + cornstarch (2:1:1 by volume) = baking powder.

Wednesday, April 30th: Baking soda + cream of tartar + cornstarch (2:1:1 by volume) DOES NOT = baking powder. I told our pastry chef it did and she used it in a cake and it came out as a pancake that got picked at in the server’s station all night.

Thursday, May 1st: Just say, “Yes, chef.”

Friday, May 2nd: I flipped my own fryer for the first time tonight, dumping the oil back in I mean. I was so proud of myself. I never do it, I always thought it was too heavy and hot and I couldn’t do it. My chef says hot oil needs to be feared and respected. But I did it tonight.
