Five Things I Learned at Work this Week Vol. 2

One little thing I learned each day: week of April 21st through 25th.

Monday, April 21st: I learned one of my cooks is from Guatemala. He has 5 sisters and 4 brothers, of which only 2 brothers are also in the US. The rest are back home. He has a little baby girl and his parents have never met her; he said he wants to go back home.

Tuesday, April 22nd: I’ll never get anywhere if I don’t ask for the things I want. I need to show up and speak up.

Wednesday, April 23rd: The rules of risotto: take it slow, keep it moving, liquid, reduce, liquid, reduce, napè, butter, wine, cheese, et voila.

Thursday, April 24th: Agrodulce means sweet and sour. We have a new burrata plate on the menu with arugula, rhubarb ribbons, and agrodulce rhubarb and red onions. It looks like spring on a plate with all the pinks and green.

Friday, April 25th: Ramps have symbiotic relationships with trees and they’re only found in the northeast.
