Monday, July 21st: Working on your birthday isn’t so bad, at least when it’s in the kitchen. My chef got me a really thoughtful gift: two antique spoons, one with a W on it for my initial, and a torne knife because he was teaching me about the things you can do with it last week. 25 wasn’t a good birthday until I got into the kitchen, then it was really special.
Tuesday, July 22nd: Working All Day Happy Hour with a Birthday hangover is so much fun.........
Wednesday, July 23rd: I learned how to make Vietnamese summer rolls today. Wrapping them is actually quite easy, and fun. The ones we’re serving have lettuce, basil, mint, green papaya, pickled watermelon rind, and watermelon batons. It’s interesting, it tastes like summer in a bite.
Thursday, July 24th: I cured halibut today in a fennel, black pepper, nutmeg, salt-sugar rub. It was the first time I’d done that, so I enjoyed it. That’s typically how it goes.
Friday, July 25th: My summer rolls were complimented by a Native Vietnamese server.
